Apple-Cranberry Upside-Down Cake

1 2/3 cups maple syrup
3/4 cup butter
1 egg
1 1/3 cups flour
2/3 cup milk
2 1/2 tsp baking powder
pinch salt
1/2 cup milk
1/2 tsp vanilla
1 cup fresh cranberries
2 cups apples, peeled, sliced










Pre-heat oven to 350 ˚F and use butter to grease the cake pan. Bring to boil 2/3 cup of maple syrup with half the butter. Boil for 5 minutes and let sit. In a big bowl, mix the rest of the butter, 1 cup of maple syrup and the egg. Add the flour, baking powder, salt, milk and vanilla and mix well. Pour the warm syrup into the cake pan. Add the cranberries and apple slices. Pour the cake batter over the fruit. Bake for 45 minutes or until done. Let cool for 10 minutes before turning upside down onto serving dish.

Note: It's best eaten immediately, before the cake can soak up all the sauce.
